Date Bark

I don’t have a big sweet tooth. If you handed me a bag of chips I would mow the whole thing down. That said, from time to time a little sweet treat sounds pretty good and the rest of my family would agree.

I have seen Date Bark pop up on Instagram a few times and since I had a bucket of dates, I decided to give it a go. I went onto Pinterest and found a few recipes, but decided to just wing it.

Here is a very loose recipe - if you can even call it that.

  1. Cut your dates in half and layer or smash them together to make the base on parchment paper.

  2. Heat up 1/3 cup of peanut butter and drizzle it on top of the dates.

  3. Sprinkle nuts on top of the peanut butter - I used almonds but you can use anything or add dried fruit.

  4. Melt Dark chocolate mixed with a little coconut oil. I used about 1/4 cup of chocolate chips and a tablespoon of coconut oil. Drizzle the chocolate on top, add a few cranks of sea salt, then place it in the freezer for 20 minutes until it’s hard and settled.

  5. Break up the bark with a big knife and enjoy!
